CORDOVA is mainly flat in the farmland
regions which border the Guadalquivir river, and mountainous near Sierra
Morena, which rises like a wall, and offers abundant hunting grounds for big
and small game.
The capital of Cordova offers rich and varied monuments: The Mezquita (the
splendors of the Caliphate), the fortress of the Christian Kings with beautiful
gardens, the Synagogue with extraordinary Mudejar style plaster craftsmanship,
the ruins of Medina Azahara, which are a sample of Muslim civil and military
architecture, and the unequalled Jewish quarters.
Flamenco is represented in it's totality with song, dance, and toque. It's
gastronomy includes gazpacho (a cold vegetable soup), fried fish, olla
cordobesa, migas (made with seasoned bread crumbs), and pepitoria de gallina.
The cordovan baking and confections are influenced by their Arabic inheritance.
Among all their sweets, the so called Suspiros de Almanzor (Almanzor sighs) are
exquisite. The Montilla and
Moriles wines and the cured pork of the Pedroches valley shouldn't be
overlooked. Two celebrations in Cordova shouldn't be missed: the Semana Santa
(Holy Week) and Los Patios (literally, "the gardens"), which is held
during the month of May, are streetside gardens devoted to the beauty of the
flower.
