The mother of the Guadalquivir river (which starts in the Cazorla mountain range) is also the land of neverending extensions of olive trees which give the province it's extraordinary olive oil production.

The capital, which is dominated bye the outstanding Santa Catalina castle, extends, like a white blanket, from the top of a hill, down to the flat farmlands. The city is splashed with renaissance architecture manifest in it's cathedral and other temples of interest. Even though JAEN is very far from the center of Andalusia (it borders the Castille region), the warmth of it's nearly 600.000 inhabitants is capable of showing the Andalusian spirit through the most diverse traditions: Holy Week, bullfighting, flamenco, and popular religious festivals.

Like the rest of the provinces, some of Jaen's towns offer a special splendor. While the Cazorla mountain range shows us the most fantastic spectacle of nature, the cities of Ubeda and Baeza have palaces and temples that make these cities specially attractive to tourism. The province has mining towns like Linares and La Carolina, and farming andindustrial centers like Andújar. The province of Jaen can look forward to a prosperous future.

The cuisine which can be savoured throughout Jaen's 13.500 km² offers everything from abundant game meats (like venison andwild boar) to cured ham, spinach, lamb meat (exquisitely prepared in many different ways) and confections like the Yemas de Santa Ursula. The most unique and outstanding element of Jaen's cuisine is the olive oil from the Segura mountain range.
